Taste and colors of summer! A farmers market dinner-red snapper, English peas and corn. Mint, cilantro, basil and celery from my herb pots. The last of my baked cherry tomatoes. Steamed both the peas and corn (off the cob) until a bit under done, then sautéed in a bit of butter and salt. Used my tried and true method of baking fish in foil by adding the mixed the chopped herbs with some Greek yogurt and putting it on top of the fish. Baked the fish for 15 minutes or so in a 375 Fahrenheit oven. Plated it with the corn/pea sauté on the bottom, the fish next and topped it with baked cherry tomatoes. Light, easy to make and delicious. This seems like a good building block for summer ! #corn #peas #tomatoes #redsnapper
