Simple and quick gazpacho - the perfect summer meal.
Chop up 1/4 red onion, one garlic clove, a cucumber, a red bell pepper and 6 or 6 big juicy tomatoes. Throw in some fresh herbs (parsley, thyme and basil - add some jalapeño if you want some heat) then blend in batches with a little water (to help get things moving) olive oil balsamic vinegar, salt and pepper - I added some cumin as well.
Serve chilled with olive oil and an ice cube.
