Blanch fresh English shelling peas in boiling water for 2 minutes. Mash gently with olive oil, lemon and mint. Blend ricotta, feta, olive oil and red pepper flakes in food processor until smooth and creamy. Slice and toast baguette, then rub with garlic - assemble and devour!
