Lamb roast

Cook lamb belly (also known as breast) over stock veg, herbs and garlic on a low heat for 2-4 hours (depending on size). After an hour add stock to bottom of pan to begin to make a gravy. When around an hour remains peel and boil potatoes while you heat oil or fat in a tray in the oven. Once potatoes are soft, drain and add to the oil. Cook for 40mins. Once the lamb is tender remove from the oven and rest while you make the gravy. Transfer the juices and stock to a pan, adding a teaspoon of flour (whisk in) and reduce. Serve with vegetables of your choice,
