Roasted tomato & Chickpea bowl
Put some cherry tomatoes on a tray in the oven with a little oil and roast.
Cut carrots and courgette/zucchini into ribbons (use a vegetable peeler to get them super thin), thinly slice Spring onions/salad onions.
In a non-stick frying pan toast some chickpeas for a couple minutes with some cumin and paprika, once hot add in the courgette and carrots. Cook for a couple of minutes then Put in a large bowl, mix through the spring onion and add tomatoes on top.
Tastes great, full of goodness and lots of healthy stuff. Plus it's super quick to make!
