I find if I do some prep work one day of the week I eat healthier overall. This week I pressure cooked 340g of quinoa. I have used it all week, which could mean nothing more then it was a simple side but usually I make different salads with the grain for a filling lunch time meal. For this I used 120g cooked quinoa, 120g grape tomatoes, 20g pecans, 25g chopped celery, and a handful of shelled raw peas. Toss it with a vinaigrette, salt and pepper, garnish with sunflower shoots and you have lunch. #notsaddesklunch #healthy #bowls #salad
