Cauliflower soup from my childhood
Sauté an onion in home made rendered chicken schmaltz (rendered chicken fat from your roasted chicken), once it has a nice color add cauliflower, leek, celery, carrot, celery leaves and cover with water. Bring to a boil, reduce heat add a little bit of fresh spinach , vegetable salt and pepper , simmer till vegetables are tender. I sometimes add a little bit of broken tagliatelle while it simmers.
