Ah, the long holiday weekend. A cook's dream come true; barbecue, pies, cookouts, and ice cold beer. It is also the perfect weekend for mayonnaise based salad sandwiches. Who doesn't like a good tuna, chicken or egg salad? It gives me pause to talk about some research I have been doing. I have used Hellmans all my life. It is the mayonnaise my mom used. I found Duke's late in life. I always wonder though about other options—I am always on the lookout for the Dixie beer of the south mayo, or the PBR of the north mayo. I tried Heinz mayo and it's too sweet for my taste, I once fell of the mayo wagon and found myself face planted in Miracle Whip but then I sobered up. Kraft, eh, not so much. By chance one Saturday morning while getting bait at the local food, fish, and pizza shop I stumbled across a dusty jar of Blue Plate. I rubbed the dust from the expiration date and it didn't appear to be tampered with and revealed it had almost 3 months to go before the freshness date expired. Blue Plate is made in NOLA. It is really good. It is my new mayo of choice. It makes a great Artichoke Chicken Salad Sandwich and the recipe is in the link below.
