Peel four or five potatoes and chunk up. Cut up three or four bell peppers, whatever color you fancy and two onions. I did one sweet and one red. You want large chunks of equal size on everything. Oh, and at least 8 whole peeled cloves of garlic. Toss all the veg with evoo and salt and pepper in a nice big roasting pan. Nestle in as many Italian sausages as you and your guests can eat. Bake at 400 degrees for an hour or so. Toss the whole lot every now and then and turn over the sausages to brown evenly. You can crank up to 425 for extra color in the last 15 minutes.
