Make rice and set aside. Pickle carrots, radishes, and onions in a little rice vinegar and sugar. Chill until ready to use.
Heat olive oil and cook ground chicken, breaking up with a spoon. Add scallions, garlic, ginger, and Thai chills. Cook briefly. Add fish sauce, soy sauce, and brown sugar and cook until liquid has evaporated.
Spoon rice over arugula or lettuce and top with chicken and pickled veggies. So good!
