A (not)salad fit for a summer Friday: salt some tomatoes and catch the water that drains, then mix with red wine vinegar and grated shallot to make a dressing. Broil tomatoes till crusty, add radicchio ribbons till they wilt. Toss roasties and dressing with more fresh tomatoes, basil, cubed mozzarella, and toasted bread chunks. Serve with tiny clean bud vase full of extra virgin olive oil, for topping.
