CREAMY BROCCOLI SOUP(without the cream!):
Sauté 1 diced onion with 3 cloves of garlic in some olive oil and set aside.
Bring 4 cups of water to the boil and toss in 1 peeled and quartered potato. Cool until tender. Add broccoli stems first, and then the florets after 3 minutes and blanch all together for a further 2 minutes.
Blend in batches along with the cooked onions and garlic; garnish with crumbled goat's cheese and walnuts. ?
