North-African Spiced Tilapia with Quinoa
Adapted from Food 52 recipe (link attached)

Fish:
1/4 cup Olive Oil
2 fillets of Tilapia
1 teaspoon of Madras Curry (cumin, coriander, ginger, cinnamon, fenugreek, onion, black pepper, clove, nutmeg)
1 teaspoon hot paprika
1 clove garlic, minced
A bit more grounded nutmeg
Fresh basil
Dried parsley
Italian herb salt (salt with rosemary, thyme, basil)
1/2 green lemon

Quinoa:
1 clove garlic, minced
1/2 onion, finely chopped
1/2 cup quinoa in grains
A bit of salt
A bit of olive oil

How to do it:
Preheat oven (220 Celsius).

Fish:
Mix all the spices together with the olive oil and lemon and marinade for around 30-40 minutes
After it's marinated, use aluminium foil to cover your baking tray. Put the fish in the tray and spill your leftover sauce over it. Bake for ~20 min.

Quinoa:
Wash you quinoa to remove a bit of its bitter flavour. Put some water to boil.

In a pan, heat the olive oil. Sautee your onion first, then garlic afterwards. Add the quinoa. Let it sautee a little bit together with the onion and garlic. Add the boiling water and some salt. Let it rest in medium temperature for around ~20 min or until the water has dried and the quinoa is fluffy.

Serve together and enjoy!
