Inspired by Melina Hammer's creations when rescuing food. Last night's peach panzanella. Used stale sourdough, broiled the peaches for a few minutes. Tossed with fresh mozzarella, oregano, mint, parsley and balsamic vinaigrette. Salt and pepper. So good it made me question why I haven't been utilizing stale bread in this way all this time! Perfect for lunch too.
