Peanut Cucumber noodles (cuudles?, never mind..)

Spiralize half an English cucumber. Chop a good handful of baby carrots ( spiralized carrots would better but all I had were baby carrots). Slice up a scallion, both white and green parts.

For the sauce:

A good sized tablespoon of crunchy peanut butter. A teaspoon of sesame oil, a teaspoon of freshly grated ginger, a tablespoon of soy sauce and a drizzle of sirracha.

Mix all of the above and top with extra scallions. Eat in your favorite bowl and enjoy the sunshine.
