Macadamia nut cookies:
125g butter
250ml brown sugar
125ml macadamia nut butter
1 egg
5ml vanilla extract
500ml cake flour
5ml baking powder
3ml bicarbonate of soda
Pinch of salt flakes
White sugar for coating
Extra chopped nuts

Cream the butter and sugar well. Add the macadamia nut butter and beat well. Beat in the egg and vanilla. Sift flour, baking powder and bicarbonate of soda and add to creamed mixture to form a dough. Mix in the salt flakes. Roll mixture into balls the size of a walnut. Toss the balls in granulated sugar and place on a lined baking tray. Press extra chopped macadamia nuts into each ball flattening it slightly . Bake st 180C for 15-20 minutes until lightly golden . Remove from oven and cool.
