Not a stunner, but one of our very favorite #summer dishes. Molly Wizenberg's sautéed corn with jalapeño and lime. Dead simple and addictive. Put a good knob of butter in a cast iron pan (more than you would think), add corn kernels, sliced scallions and half of a diced jalapeño. Cook on high until corn is a bit charred. Add some water to deglaze the pan (the best part) and squeeze a lime over it all. The best. #sidedish ypu can make this with frozen corn too.
