Slow roasted Roma Tomatoes: these are like money in the bank. We pick up a few of the tomatoes each week in the summer at the #csa. Slice in half and scoop out the guts (experimenting with those...stay tuned). Add roughly chopped garlic, woody herbs (think Rosemary, thyme, etc.), olive oil, salt and pepper. Roast throughout the day at around 200. Put into freezer bags. In the winter, use wherever you'd use canned tomatoes. We make pasta sauce, add them to soups and braises, add to a cheese plate, etc. it makes the most amazing soup if you put a bag of them into some chicken stock and then blend with a bit of cream. #preserving #summer
