Succotash of sorts ? A little help from the garden -- zucchini, red poblano pepper, habanero -- and a little help from the freezer -- edamame and sweet corn -- makes for a speedy supper. Sautéed all in a little grape seed oil and seasoned with pink Himalayan salt. Finished with a knob of butter; delicious without for vegan. Served with brown rice. Enjoy!
