Muddle a handful of cherries with a couple splashes of syrup (leftover from canning apricots, with honey, rosé, and ginger). Add ice, booze (bourbon here), a couple dashes each of jasmine flower water and Peychaud's bitters. Stir. Top off with sparkling water.
