Roasted bell peppers with cannellini beans ?
While roasting 2 peppers in the oven, chop fresh parsley (about half a cup), 1 clove of garlic and a couple of anchovies. Combine with 2 table spoons of olive oil. Then add a can of cannellini beans (about 150gr), and mix all the ingredients.
Peel and clean the peppers, and arrange them on a plate. Distribute the beans on the slices of peppers.
Incredibly tasty and healthy.
