Dalton Beatrice fried up some squash blossoms and wished for more! Mix ricotta with basil, mint, lemon zest, salt and pepper, and fill each blossom with this mixture. Heat oil to 350 degrees F and mix 1/2 cup flour with some salt and 8 oz seltzer (club soda or beer works too). Gently dip each blossom in batter and then fry till crispy and light brown, about 3 minutes. Place on a towel and sprinkle with salt.
