Soft-shelled crab
Soak the crabs in buttermilk for about one hour. Dip them in a beaten egg, then dredge them in a mixture of cornmeal and flour. Pan-fry them in butter and olive oil. The butter gives them good flavor, and the olive oil lets them fry at a higher temp without burning.
