Salmon Patties w/ avacado salsa and roasted zuchini

Serves 2-3

2 cans of boneless skinless salmon
2/3 cup breadcrumbs seasoned
1 egg
1 clove Garlic minced
1 Tb of lemon juice
Salt & pepper to taste

Mix all ingredients together, let sit for 5 minutes for breadcrumbs to absorb moisture. Form into patties, size of palm

Heat skillet medium with some olive oil, place patties (4 min each side or until browned)

Serve with side of zuchini

5 Zuchinis
3 tablespoons of olive oil
1 tsp garlic powder
1/2 cupParmesan cheese grated
Salt pepper to taste

Preheat oven to 425 F. Prepare metal baking pan with olive oil, salt, pepper, garlic. Cut zucchini into skinny wedges. Spread on pan to get even coat of oil and sprinkle with cheese. Bake for 15-20 minutes until soft.
