The easiest way to cook tempeh: Mark Bittman's tempeh crumble! Get some olive oil hot in a cast iron, crumble in tempeh (rip it sort with your hands!), season with salt and pepper, and stir until crispy and browning, 5 to 7 minutes. Sarah Jampel added corn (it's here!!) and tomato for the last few minutes of cooking. Mix this into a grain salad with pesto or green sauce.
