Cured boquerones with tomatoes on toasted whole wheat pita: per @huntergathercook, gut and clean fresh anchovies or smelt, layer with salt and refrigerate 3 hours, rinse and cover with vinegar overnight. Discard vinegar and layer fish with parsley, minced garlic, and evoo. Refrigerate at least a few hours. Eat with tomatoes on toasted pita....or a million other ways.
