Quick Ragu with homemade pasta for lunch. Scamorza grated on top, because we were out of parm. I keep portioned, frozen sauce in quart bags (~ 350g) and throw together the pasta while the sauce is thawing on the stove. For two portions of pasta, I use 100 g semolina, 50 g water.
