You know you miss it....your Grandmother's (or Aunt's, Mother's, Cousin's, etc.) famous Grasshopper Pie: the fluffy, minty sweetness with just the right amount of chocolaty crunch from the Oreo (or Hydrox!!) crust. Topped with chocolate shavings -- the coolest thing ever to a kid! Make your own: for the crust, crunch up a bit less than 1/2 a package of Oreos in a food processor, mix in less than a stick of melted butter, press into a pie plate and put in freezer. For the filling. melt about 1/2 a package of big marshmallows in double boiler with about 2/3 c milk or cream, let cool, add creme de menthe (5tbs?) and green food coloring if you can't get the green creme de menthe. Whip about 1c of whipping cream to stiff peaks and fold into the green gloop. Pour into shell, back in the freezer for at least 2 hours. Put in fridge when you sit down to dinner. Serve to your grateful kid brother, his wife, & their son, and your husband (who has never seen this before), and continue a great family tradition. Happy weekend at the lake!!!
