Oatmeal Blueberry Coconut Dark Chocolate Chunk Cookies

Seriously my favorite cookies of all time. So so good. Moist, chewy, sweet but not too sweet...the perfect cookie. Also fantastic without the chocolate. This recipe makes about 2 dozen cookies.

1/2 cup coconut oil
1/2 cup room temperature unsalted butter
2/3 cup light brown sugar
1/2 cup white sugar
2 eggs
1 1/2 teaspoons vanilla extract
2 cups all purpose flour
1 1/4 teaspoons baking soda
1/2 teaspoon salt
2 cups old fashioned rolled oats
2/3 cup shredded sweetened coconut
2/3 cup dark chocolate chunks
2/3 cup dried blueberries

Preheat oven to 350F.

Cream coconut oil, butter, and sugars. Then add vanilla and eggs.

In a separate bowl, whisk together the flour, baking soda, and salt.

Add the dry ingredients to the wet ingredients cup by cup, stirring until just incorporated.

Add in the oats, coconut, blueberries, and chocolate. Mix until evenly dispersed.

Put dough in balls about 1/4 cup and then push down slightly after you put them on greased baking sheet. Leave room, cookies will spread. Bake about 14 minutes for soft and chewy, 15 for crispy. Enjoy!
