I received a crate of fresh blueberries the other day so of course I had to make a galette! The pastry dough recipe is from fellow (Not)Recipes user Fatimah. I loved her tip on using a stand mixer for easy dough making. For the filling I spread whipped ricotta onto dough then added the mixture of blueberries, sugar, lemon juice and zest and cornstarch. Fold edges and pleat, brush with egg wash and bake in a 425 degree oven for half an hour or until golden.
