Mexican spiced twice baked potatoes. Bake up some russets, then scoop out the innards into a bowl and combine with sautéed peppers and onions, beans (I used kidney), a dollop of sour cream, and cumin, chili powder, s&p. Top with cheese and bake again until the cheese gets crispy.
