Guacamole: make a paste in the bottom of a mortar and pestle of two garlic cloves, a small diced red onion, two chopped jalapeños, a small handful of fresh cilantro, and a teaspoon of coarse salt. Add three avocados, diced, and the juice of one small lime. Mash mixture with the pestle to desired consistency. Fold a pitted and diced tomato into the mixture. Adjust seasonings to taste. Serve immediately.
