Pink oyster mushroom and fresh pea risotto (from previous post). I warmed stock ice cubes for handy flavor-at-the-ready while, in another pan, sautéed sliced onions and the mushrooms, torn into bite-sized pieces.
After adding the rice, I poured ladlefuls of warm stock into the mixture and sipped an evening cocktail as I dutifully stirred.
When the risotto was almost ready, I added a small bowl of freshly shelled peas and stirred them in, watching for them to turn bright green from the heat and moisture of the great porridge.
