Spatchcocked roast chicken using the Food Lab's method. About 45 minutes at 450 for 4 pound bird. Rubbed (on and under skin) a paste of sage, rosemary, garlic scapes, lemon zest, parsley, salt, and oil before roasting. Delicious!
