Raw ginger slice!

Base:
2 tbsp coconut oil
2 tbsp honey
1 tsp vanilla
1 cup softened cashews
1 cup almond meal
1 cup oats
1 tsp ground ginger
1/4 chopped dried dates
Melt honey and oil and add vanilla
Combine all ingredients in a food processor until combined
Place in a lined tin push down firmly
Place in freezer while you make the topping

Ginger icing:
5 tbsp coconut oil
4 tbsp honey
1 tsp vanilla
3 tbsp ground ginger
Place all ingredients in a heat proof bowl and melt in the microwave
The oil and honey will become separated so whisk for 2-3 minutes until a thick caramel consistency is reached
Pour and spread on top on the base and top with chopped dark chocolate, pistachios, and crystallised ginger
Place in the fridge for already 2-3 hours until firmly set
