Penne Arrabiata - sauté pancetta and garlic in olive oil, add hand-crushed canned San Marzano tomatoes and red chili flakes, and simmer until reduced to a point where you see the olive oil separate from the tomatoes when you run a wooden spoon through. Take off heat and add chopped basil and salt to taste. Toss with al dente penne. To serve, drizzle with extra virgin olive oil and grated cheese.
