This is one of my favorite new cookie recipes in years. I don't care much for the intense sugary sweetness in so many cookies that tends to hijack their other flavors. These have only 6 tablespoons of sugar. The dried fruit gives them both sweetness and flavor. I don't tinker with this recipe, as it is perfectly good as is, though I'm thinking about throwing in some chocolate chips the next time I make a batch. The recipe calls for 1/4 cup of dough per cookie, but I use about half, as we prefer smaller cookies.

CheatCode: As noted above freezing balls of dough for baking later. I scoop the balls and freeze them on a cookie tray. When frozen, I wrap six or eight in a sheet of parchment large enough for baking them, on which I write the name of the cookie, the oven temperature and the baking time. I pop those parchment packets into a plastic bag and freeze. Then, when I feel like making a batch, I simply open the parchment, spread it out on a baking sheet, and put them in the hot oven.
