duck fat roasted fingerlings, pan-seared duck breast. ❤️

for the duck, preheat oven to 400 F. season as desired, generously score the fat. sear in a skillet, skin side down, over medium heat for approximately six minutes or until the fat has rendered. flip breasts for a quick sear on the other side, then finish in the oven for eight minutes. perfect medium/medium-rare. let breasts rest for 5 minutes before slicing and serving. and, most importantly, always strain & save those renderings for the most delicious vicious cycle of all time #thefatthatkeepsongiving
