Honey Broiled Grapefruit & Thyme Spritzers
Delightfully tart and refreshing summer drink.
3 ruby red grapefruits
3-4 tablespoons honey
1 teaspoon fresh thyme leaves, plus sprigs for garnish
Prosecco or gin and bubbly water
1. Preheat oven to broil. Cut the three grapefruits in half coat 5 of the 6 halves with the honey. Put on a parchment lined baking sheet and broil until caramelized - about 10-15 minutes.
2. Once caramelized allow fruit to cool. Put ice, thyme leaves, a few segments of the unbroiled grapefruit half, and gin (if using) in cocktail shaker. (If using prosecco, just omit the alcohol right now). Squeeze in the juice from the broiled grapefruit halves. Shake until blended.
3. Strain into a glass with ice, and garnish with a thyme sprig. Top off glass with bubbly water if using gin, or with prosecco. Enjoy!
