Sauté: onion, red pepper, fresh tomato (any kind) in olive oil. Add garlic. Add canned tomatoes (a reasonable amount - maybe half a can). Splash balsamic. Red pepper flakes. Salt, pepper. Optional: at the end add sliced chorizo or sausage. Stir in fresh grated Parmesan so it melts in. Meanwhile: prepare quinoa (I used red).
When quinoa is done, taste the sauce and season if needed. Stir quinoa directly into the sauce to combine until it's a risotto-like consistency. Top with fresh basil. #yum
