Garlic Confit ? Very gently simmer/poach garlic cloves covered with olive oil for 45 minutes to an hour. Keep temp low; looking for cloves to soften and turn golden brown. Place in a clean glass jar covered with the oil. Along with freshly harvested garlic, added bay leaves, rosemary and strips of Meyer lemon zest from the garden once finished poaching. Store in fridge.
