Everybody has thoughts on burgers, I do too. I often grind a chuck roast that has really good marbling. When I don't feel like the hassle I almost always buy bison and to every pound of bison I add 1/2 pound of 85 % grass fed beef. It adds enough moisture to keep the bison from drying out. I break it all into small pieces before mixing because the less you mix it the more tender it is. To the mixture I add salt, soy, black pepper and MSG (1.4 billion Chinese never have headaches ) but omit the MSG if you don't believe the science your burgers will still be good. I like a 6oz patty. I pat them out big planning on shrinkage and they wind up around a 1/4 pound after cooking. If you don't like burgers bigger then your mouth(I don't either) I add few add-ons—ketchup, mustard and pickle are enough for me. I also give the bun a serious smash while griddling thus streamlining the burger while enhancing the pure bison flavor.
