I FINALLY made one of the MANY recipes I've saved on fb (inspo here from greatist..) Cut peppers in half and remove seeds. Sauté half an onion and two cloves of garlic. Season with chili powder, cumin, paprika, salt and pepper. Add cooked quinoa, can of diced tomatoes, can of black beans and a couple handfuls of baby spinach. Cook until greens wilt. Finish with a handful of chopped cilantro. Stuff peppers and place in baking dish with 1/4 inch of water or broth. Cover with foil and bake at 400 for 45-60 minutes. #vegan #notrecipe #notyourmamasstuffedpeppers #goodandgoodforyou
