•Cut a large tomato into bite size pieces. •Thinly slice half a large purple onion and massage with kosher salt and squeeze excess liquid out.
•2 cups of lightly packed 2inch pieces
•Combine tomato pieces, purple onion slices, cilantro and toss with dressing made with fish sauce, lime juice and a pinch of sugar.
