Quick pickled bitter melon
•Cut a large bitter melon lengthwise. Cut off both ends and discard.
• Scrape out fluffy white part and seeds.
• Slice crosswise into 1/4" pieces.
• Sprinkle lightly with kosher salt and massage lightly.
• Pour a juice of one lemon over the bitter melon and mix.
You can eat immediately or refrigerate overnight for milder taste.
