Quick pickled bitter melon
•Cut a large bitter melon lengthwise. Cut off both ends and discard.
• Scrape out fluffy white part and seeds.
• Slice crosswise into 1/4" pieces.
• Sprinkle lightly with kosher salt and massage lightly.
• Pour a juice of one lemon over the bitter melon and mix.
You can eat immediately or refrigerate overnight for milder taste.

Thank you for the feature! Besides lemon juice, I sometimes use rice vinegar, apple cider vinegar, champagne or white wine vinegar, rice vinegar and shirodashi combo, ponzu, fish sauce, Thai chili, shallot and lime juice combo, etc. I might add, thinly sliced lemon, onion, red pepper flake and anything that goes well with bitter melon. There are so many combinations.
