I was quite disappointed in a gingery blueberry pickle recipe I tried this morning, but I did not despair. I simply put the berries and ginger in pint jars instead of smaller ones, and will use the berries in mostardas that I'll make in November, to give to friends and family. The problem with the pickle recipe may lie in the type of blueberries on our bushes; their skin is quite thin, which may explain why they became soft so quickly in the pickling solution. I saved the extra brine, which I will find some other use for in the coming weeks. ;o)
