Summer dinner parties should be fast and easy!

Boil potatoes until almost tender and add green and wax beans. Cook another minute to blanch the beans. In the meantime, throw a handful of mint, half handful of parsley, a bit of sliced ginger and garlic in a food processor with salt and olive oil. Drain the potatoes and beans, let cool and add the mint pesto, salt and pepper to taste. (Amended recipe from Vegetarian times)
