Cornmeal and zucchini waffle sandwich (gluten free) :
For the waffle : blend cornmeal until it resembles fine sand. Add grated and drained zucchini, baking powder, eggs, melted butter, salt, and pepper. Cook in a waffle iron or on a griddle pan until golden and crispy. Served here with a quick onion relish, ham, tomatoes, lettuce and a fried egg. ?
