Mint Chocolate Chia Pudding
1 1/4 cups kefir
3-4 large pitted dates
1/4 cup chia seeds
1 heaping tablespoon cocoa powder
1 tsp vanilla extract or scraped vanilla bean
Sprig of mint
Blend all ingredients, spoon into an airtight jar and allow pudding to set up in the refrigerator at least one hour overnight is best.
Stir in a few mini chocolate chips (optional)
*Use kefir cream for a more mousse like texture.
