Greek yogurt blueberry tart.
Yogurt layer: Strain 3 cups of plain Greek yogurt for two days in the fridge. It will turn into something resembling marscapone. Mix with a tablespoon of maple syrup.
Base: Crush some digestive "biscuits" as the Brits say. Graham crackers would be equally delicious. (I should have used some melted butter to help bind the crumbs but I was lazy!).
Topping: A quick blueberry topping. Add a pint of fresh blueberries into a pan with the juice of half of a small lemon and a tablespoon of maple syrup. I added a tablespoon of chia seeds to help thicken but that's optional.
Layer and top with slivered almonds. Almost healthy enough to justify eating it for breakfast.
